Ingredients:
2 ripe Tomatoes (medium size)
1 Dosakaya/Yellow Cucumber/Kakad (medium size)
2 vegetarian Drumsticks (large)
2 Onions (medium size)
2 Green Chillies
2 Red Chillies
3-5 cloves of Garlic
5-7 Curry Leaves
A sprig of Coriander Leaves
2 tablespoons Oil
1/2 teaspoon each of Mustard, split White Gram/Urad Dal/Minnapa Pappu, split Bengal Gram/Chana Dal/Senaga Pappu and Fenugreek Seeds
1 tsp of Salt, Chilli Powder & Turmeric
Preparation:
1. Wash all vegetables under running water.
2. Dice Tomatoes and Dosakaya (remove skin and deseed, but you can also retain seeds if you prefer) into small pieces.
3. Cut Drumstick into 2" pieces.
4. Chop Garlic and Onions into small pieces.
5. Slit 2 Green Chillies.
Cooking:
1. Heat a kadai/shallow pan.
2. Add 2 tbsp Oil.
3. Add 1/2 tsp Mustard Seeds, Fenugreek Seeds, 2 Red Chillies and 5-7 Curry Leaves.
4. Add Drumsticks and saute in oil for 2 minutes.
5. Add chopped Onions. Cover the pan with a lid and let it cook for 3 minutes.
6. Add diced Tomatoes and Gourd. Cover and cook for 3 minutes.
7. Add finely chopped Garlic & slit Green Chillies and cook for another 3 minutes.
8. Add a tsp of Salt, Chilli Powder and Turmeric. Adjust seasoning as needed. Cover and cook for another 5 minutes. Add 1/2 - 1 glass of water if the curry looks too dry; otherwise let the vegetables cook in their own juices.
9. Garnish with Coriander Leaves, plate and serve hot.
Variations:
1. You can cook the same curry without the drumsticks.
2. Add fresh green peas for added flavor.
3. Use soya granules to make the dish more healthy.
Serving:
2 portions, best eaten with cooked white rice.
